Alimentación y dieta en la Provincia de Caracas durante la segunda mitad del siglo XVIII

Using recent quantitative figures of food consumption in 1751-52, the present article examines the patterns of nutritional and energetic values in the food intake of colonial times in Provincia de Caracas. A ‘standard diet’ for 1751 and 1775 was reconstructed. Cluster Analysis and Correspondence Analysis and other evidence suggest that the dual nature hypothesis of colonial food intake must be revised. The diet structure of 1751 and 1775 can be considered nutritionally adequate.
